1/2 c Finely chopped onion 1/2 c Chopped Italien parsley 1/2 c Shredded carrot 2 Cloves garlic minced 2 tb Spanish olive oil 1 1/2 c Chicken broth 20 1/2 c Cubed potatoes |

| Approximately 1" Salt and pepper to taste In skillet cook onion parsley carrot and garlic in olive oil until vegetables are tender. Add broth potatoes salt and pepper to taste.Cover and simmer for 10 minutes. Uncover and simmer stirring occasionally for 20 minutes.Garnish with additional parsley if desired. |
