  Salisbury steaks
 
Yield: 1 Servings
 
2 lb Ground beef      2 Eggs slightly beaten
1/2 ts Salt      1/4 ts Pepper
1/4 c Finely chopped onion -(optional)      1/2 c Fresh fine bread crumbs
3 tb Margarine      1/4 lb Fresh mushrooms sliced
1 tb Oil      1 1/2 c Beef Broth
2 tb Flour
 Combine first 5 ingredients in mixing bowl. Shape into oval patties. Sprinkle both sides of patties with bread crumbs and >> press crumbs into patties. Chill in refrigerator at least 30 minutes. Melt 2 Tbsps. margarine in a hot heavy skillet. Saute mushrooms. Remove them from skillet; add oil and remaining margarine. Add patties and brown. Remove to a platter. Add broth to pan drippings. Blend flour with a small amount of cold water to form a paste. Add to skillet and bring to a boil stirring until smooth and thick. Add mushrooms and stir.
